	A mint truffle should taste like fresh mint, the way mint tasted when we were kids, just picked from the bank of the creek in our backyard.  Seth Ellis steeps a blend of peppermint and spearmint in heavy cream, then adds a touch of orange peel and cinnamon to the ganache.  The hand-cut ganache squares are covered with rich 66% dark chocolate.  All ingredients are certified organic.  The chocolate and sugar are fairly traded.  Nut-free and gluten-free.
